What’s In Jimmy Moore’s Low-Carb Paleo Diet?

After revealing the transition Christine and I have made to more of a low-carb Paleo diet this week, so many people have been asking “What kind of food do you have in your refrigerator and cupboards now?” That’s a great question! How about a video?

    I think I’m hitting the sweet spot between Paleo, Primal and low carb, too. I started my journey into better health via the Weston A. Price society, and then found low carb. There is an area where they all overlap, and that’s where I’m at! I do fermented foods too, which, face it, during a lot of history just kind of happened on their own. 

    You can do low carb a lot of different ways, from heavily processed to a whole foods, traditional nutrition, or paleo or primal approach. I think where the last batch overlaps is where the science is.

    That is awesome, Jimmy!  Low carb is great for weight loss and overall health, but going the full nine and addressing food quality is going to improve your health so much more!!!  Kudos!

      I knew the better food quality was optimal Jared. But I have hesitated until now. Wish I’d done it full force years ago.

    Looks yummy!  Try a Larabar for a treat.   Split one for portion control.  I also like to have a few nuts and raisins, one nut + one raisin as a sweet treat.  Also, Christine might want to switch to peanuts roasted in the shell because Plantars uses cottonseed oil and I don’t think we’re supposed to eat cotton seeds or it’s oil.  The second reason is that she’ll eat less because you have to shell them and it slows you down.   Try some roasted & salted pumpkin seeds too.  Eden foods makes some really good ones and they’re a fantastic source of magnesium.

      I’m not a fan of the peanuts or peanut butter she is having…but if those two things are the worst she’s eating, I’ll be fine with it until they run out. She’s eating PLENTY well otherwise. She’s not even having those but every few days and it’s minimal. Trust me, I’ve said everything you have Laura. She’s getting there.

    Galina, I can appreciate your response. These meals I’m making are indeed gourmet, but are so darn super-duper easy to make it’s funny. And the portions are perfect for us. THANKS for your feedback!

    Yes, all three of our feline friends are on the Catkins diet (which you’ll hear more about in an upcoming podcast with a low-carb veterinarian).

    Water is all we are drinking right now. We’ve considered tea, but no sweeteners. EWWW!

    Homemade raw coconut milk is to die for! I have a short picture show/video on youtube explaining how to make it. Its a great alternative to dairy milk and sooo much more healthier than almond milk.

    Your food looks wonderful, Jimmy! If your not a sauerkraut fan you could always ferment some homemade salsa to get those healthy bacteria. I’ve never gone full paleo (love my dairy) but would really like to give it a try someday. I look forward to reading more about your paleo adventure! Thank you for sharing this!

      Tiffany, there are some Paleo peeps who allow for high-fat dairy (Dr. Kurt Harris, for example), but I’m gonna give it a go to see how I do. So far it’s been fabulous!

     You might find this book interesting.  It’s called “What I Eat:  Around the World in 80 Diets.”  It profiles people from around the world and photographs their daily food consumption.  It starts with with a low calorie diet at about 800 calories all the way up to 12,000.  It’s a fascinating book.   Kind of looks like genes play a large role in how one utilizes calories.  The woman in the back really isn’t that big considering she consumes approximately 12,000 cals per day and some people look like they’re fighting weight gain on a lot less.  I checked this out from the library.  The authors might be a good interview.

    Just some remarks: Don’t overdo it on the nuts (omega
    6=inflammation). Peanuts (and inside green beans) are legumes (not allowed in
    paleo/autoimmune diseases). Keep the flax seed oil in the fridge (gets rancid
    easily). Cheers

    I am so excited for you and Christine, and look forward to hearing how your Paleo plan works for you.  I experienced immediate results with skin and digestive issues, but the weight loss was at a snail’s pace until recently.  And all of a sudden, I’m down 12 pounds…6 since I got to meet you at AHS!
