In Episode 469 of “The Livin’ La Vida Low-Carb Show with Jimmy Moore,” we’re back from the Low-Carb Cruise (more on that in an upcoming post) and ready to kick back into high gear with some fabulous podcast interviews in the coming months. Today we begin with an interview I posted on YouTube last week before leaving on the cruise from a researcher named Dr. Charles Mobbs, a neuroscientist and researcher from the Mount Sinai School of Medicine. He was one of the investigators on a study published in the April 20, 2011 issue of the journal PLoS One entitled “Reversal of Diabetic Nephropathy by a Ketogenic Diet” that put mice with diabetes on a diet consisting of 87% fat, 8% protein, and 5% carbohydrate. The result? Their kidney disease (known as “nephropathy” by scientists) brought on by diabetes was not just halted or slow, but actually REVERSED! This is a huge finding about ketogenic diets that warrants further research on humans in the future. I think we’ll be hearing a lot more about the health benefits of low-carb, moderate protein, high-fat ketogenic diets out of the research lab of Dr. Charles Mobbs in the years to come. Today’s primary interview is with a wonderful wife-turned-cookbook-author Judy Barnes Baker who you might already know from her fantastic low-carb cookbook called Carb Wars: Sugar Is The New Fat. We discuss in our interview why she decided to start creating low-carb recipes and how through a series of fortuitous encounters with the right people at the right time, she was asked to write a book for diabetics that would have the American Diabetes Association seal of approval on it. This is one wild story that you will just have to hear to believe! Judy’s book is set to be called The Healthy Edge: A Cookbook Based on the Latest Science of Nutrition and Metabolism with a Preface by Dr. Mary C. Vernon, the Foreword by Jackie Eberstein, and a Scientific Perspective by Dr. Richard Feinman and will be released any day now.
