In Episode 461 of “The Livin’ La Vida Low-Carb Show with Jimmy Moore,” we are pleased to welcome Certified Nutritional Therapist Dr. Greg Ellis from ByeByeCarbs.com who is one of the world’s foremost authorities on the subjects of fitness, nutrition and health. Dr. Ellis has over four decades of dedicated experience researching the diet of average, everyday people to elite professional athletes. He has a brand new “magnum opus” book about what he’s most passionate about in 2011 called The Glycation Factor: How The Recommended Healthy Diet Maims And Kills By Glucocide where he explains why he believes one of the biggest concerns we have about health these days is the sugar being consumed by people in the form of white sugar as well as fruits and vegetables. As you’ll hear in this interview, Dr. Ellis is quite emphatic, confident and knowledgeable about why low-carb is right for just about anyone and everyone to be following.

Listen to Dr. Greg Ellis share his unique perspective on low-carb living:

  • Why he pursued learning more on diet, fitness and health
  • What led him to a low-carb diet as the optimal nutritional plan in the late 80′s
  • Why he gained 5 pounds following the traditional Atkins diet
  • The major mistake made by Dr. Robert Atkins in his low-carb diet
  • How calories are naturally contained when you eat a high-fat, low-carb diet
  • Why people stop seeing ketones on the Ketostix and why it’s no big deal
  • What ruthless cycle that happens when you slip off of eating low-carb
  • His foray into eating a strictly zero-carb diet and why nobody needs to eat that way
  • The primary flaw made by Gary Taubes in his books
  • Why a low-fat diet overcomes the best willpower people can muster
  • The dangerous path that many low-carbers go down doing their diet
  • Why you should never get hungry on a low-carb lifestyle
  • Why he’s not a fan of people “micromanaging” their low-carb plan
  • How he gets extra fat into his diet without thinking about it too much
  • How feeding your body well at the cellular level will make you healthiest
  • The importance of understanding the process of Malonyl-CoA
  • His response to James Krieger’s columns on insulin getting a “bad reputation”
  • Why The Glycation Factor is going to speed up low-carb acceptance
  • What the glycation theory is and why it’s more important than the cholesterol hypothesis
  • Why nutritional axioms “have to change their tune” in the coming years
  • What kind of litmus test people can use to separate fact from fiction with health claims
  • The frustration about the reporting of the “low-carb” diet studies
  • Why it is ludicrous to have universal nutrition recommendations for everyone
  • The gross misrepresentation of calories in self-reporting by study participants
  • Why it becomes much more difficult to lose more weight as you are losing weight
  • How people eating high-fat, low-carb can determine the right caloric intake
  • What’s gonna change the cultural fears about fat and cholesterol
  • The “Consensus Nonsense-us” meeting that happened in 1985
  • What his typical low-carb diet menus look like
  • Why he doesn’t worry about the Christmas holiday season anymore
  • How popular low-glycemic diets work (and then DON’T work!)

I listened to part of the pod-cast and looked for the part that strikes me the most: calories (energy). I do not think that Atkins or Taubes made a mistake on calories at all. Calories out is NOT an independent variable that just stays constant. We can’t storage fat for long term usage unless insulin is provoked alongside insulin resistance.
