In Episode 436 of “The Livin’ La Vida Low-Carb Show with Jimmy Moore,” we hear from an anonymous blogger who calls herself CarbSane from the “My Carb Sane-Asylum” blog. She’s been quite critical of the concepts promoted by New York Times science journalist Gary Taubes (describing him often as Taube$) in his book Good Calories Bad Calories and I wanted to invite her on my podcast to talk about why she is skeptical of the carbohydrate/insulin hypothesis.

Listen to CarbSane talk about her unique background in science that qualifies her to write authoritatively about the subject of nutrition on her blog, her personal very low-carb plan for weight loss, her foray on and off of the Atkins diet, the racing heart and tingling she experienced while eating Atkins and why she decided to eat more carbohydrates to remedy it, what drove her to come back to low-carb again despite her skepticism about it based on her past attempts, her self-described “cheating plan” for doing low-carb, her secret to preventing the rebound weight gain, why she chooses to eat a few more starches now compared to what she was consuming during her weight loss, the long-lasting impact the Atkins diet had on her diet, why an occasional cheat is more productive than not, what her typical menus look like, why she believes you can’t gain more fat weight than the volume of whatever food you consume, her relaxed experiment eating a low-fat diet and exercise program in the past, why she believes counting calories (not carbs) is king, why she thinks long-term low-carbers overestimate the carb counts in foods, the “crazy theories” promoted by Gary Taubes that she’s seen out in the blogosphere and where she thinks he gets it most wrong, what important nutritional concept she thinks is blatantly ignored by the low-carb community, what she agrees with Taubes about, whether she thinks Taubes has done more harm than good, her anger and disgust with how Taubes “cherry picks” the data that supports his theory, why she thinks Taubes lied for his own personal financial gain, her research into carbohydrate metabolism, why the older research cited by Taubes is invalid, why she thinks insulin is good in the body, and what she thinks a diabetic needs to do before beginning a low-carb diet change. Agree or disagree, there’s no denying CarbSane gives us a lot to think about.

Boy is this woman ever angry! Sheesh.

  • Beth

I really admire you, Jimmy, for your open-mindedness. You are such a very civil man! You almost completely yielded the microphone to her and she talked nearly without stopping for the entire show. Whew!

“CarbSane” sure had a lot to say, but in the end it comes to this: we ought to be highly suspect of a person touting any theory, giving any advice, and especially for being critical of others, who are unwilling to identify themselves. In my opinion, this tosses any credibility she may claim to possess completely out the window.

  • http://mylowcarbjourney.com Hank Garner

Wow, Jimmy. I have never been so frustrated as when I got about 30 minutes into this podcast. I think I broke my headphones. I’ll send you a bill :) .

  • Jessica

I think she makes some valid points. I can’t pretend to have a full idea of the science and I can’t really make out much truth in either if I’m honest. Gary Taubes’ argument is convincing, and I have found it to be true in practice. I think so many people come away from GCBC thinking they can stuff their faces with fat as long as their carbs are low, and it’s just not the case; nor is it the case he’s trying to make in the book. Personally, I don’t think it matters whether or not it’s insulin which is at fault here. Carbohydrate reduction clearly does something right as far as appetite control – whether it’s insulin or leptin or ghrelin or all of them or neither it doesn’t make a lick of difference as long as your appetite is being controlled and you feel well.

  • Jennifer

I found that what she said was too technical. As a lay person I had trouble understanding it. And I have read some of her views on Taubes and I find them really disturbing, because they are laced with personal attacks on him. Her refusal to identify herself, along with her unprofessional approach to debate really reduce her credibility in my eyes.

  • Karl

Man oh man after listening to CarbSane I am frustrated as heck. All these scientific arguments are so da** hard for the common person to know what is the TRUTH! I dont know what to believe anymore! I agree with Jennifer that I am somewhat suspicous with the identity issue but it doesnt invalidate her questioning. Jimmy, no more openmindness please :) . I still think Gary Taubes is owed much for begging the questions he does. Ultimately it comes down to what works for each individual that counts the most. Thank you so much Jimmy for what you do.

THANKS Karl! Taubes will have his say in Episode 439 this Thursday and Friday. DON’T MISS IT!

  • ekon

Will give it a listen later together with Taubes’ response. But calling him “Taube$” as if “Good Calories Bad Calories” is some kind of quick cash grab is just immature, regardless of the substantial points made.

Especially so as Taubes tends to be rather open about that carbs might become a serious problem only if aggravating factors are present – he speculates a bit about fructose being such a factor in WWGF, for instance.

  • AY

Thanks a lot for the service you provide. I was very overweight a pretty serious type-2 diabetic on the maximum dosage of metformin. I struggled a lot with weight loss since I was 9. I regularly exercise but it didnt help very much (other than make me feel better). A friend suggested I read GCBC and I found it very illuminating. I am now off all medication and my HbA1c is at the level of non-diabetic.

I have a science background as well (undergrad in electrical engineering and masters in applied math and statistics) and I recognize the value of getting disconfirming evidence to keep you honest. So I applaud you for bringing skeptics on. My observation is that this woman came off as completely incoherent and generally vicious and unprofessional. Perhaps she is just a poor communicator and has valid criticisms (although I cant see it from reading her blog), but she does no one any good by vicious incoherent attacks.

Thanks for doing what you are doing.

    • http://www.livinlavidalowcarb.com Jimmy Moore

THANKS AY! I catch a lot of grief for getting people on my show who aren’t necessarily agreeable to the low-carb message…but you nailed the reason why I do it. :) I wish you well in your ongoing journey to beat your diabetes.

Obfuscation is a tactic when the conclusions don’t agree with what you believe.

An anonymous person can say they have degrees in anything, and there’s no way to verify it. So their credentials are irrelevant. I personally think credentials are irrelevant anyway. Credentials plus $1 will buy you a cup of coffee.

Planned cheats are a terrible idea for most people. Especially those who are addicted to sugar. If they cheat, they gradually cheat more and eventually go off the diet all together.

When you eat carbohydrates (minus the fructose), they are broken down into glucose and enter your blood stream. Your body must do something with them because your blood sugar must be within a very narrow range, or you die. Period. End of discussion. Ask any type 1 diabetic who has to manually control their blood glucose levels. It’s misleading of her to say that they are not turned to fat. If you are not exercising like mad or doing heavy labor, your body has no choice but to turn them to fat and store them. Or again, you die.

“Conclusions: These results support the concept that both hyperin-sulinemia [from high carb consumption] and a low-fat diet increase DNL [de novo lipogenesis], and that DNL contributes to hypertriglyceridemia.” — “Hepatic de novo lipogenesis in normoinsulinemic and hyperinsulinemic subjects consuming high-fat, low-carbohydrate and low-fat, high-carbohydrate isoenergetic diets” from the American Journal of Clinical Nutrition, Volume 77, Issue 1, 1 January 2003, Pages 43-50

In other words, the higher your carb intake, the higher your triglycerides. What are triglycerides made from? Free fatty acids.

“Our bodies don’t sense liquid calories…”
Not true. Blatantly false in fact. Anything you take in through your mouth is exquisitely sensed on a metabolic level. Your insulin response is more accurate in this manner than if glucose is injected intravenously. There was a study where they fed rats chow diluted in water, and they consumed enough until they got the amount of food they needed. And also, tell me why there are so many obese people who don’t drink sugary soda? I know plenty of obese people who don’t touch drinks with calories in them, and yet they’re still obese.

By her own reasoning, if fat is stored as fat and carbs tend to be burned off better, then a high-fat/low-carb diet would not work. How could it? She says that people grossly underestimate what they eat. Okay, say they do. Then that means they eat way more calories than they think on a low-carb diet. Especially since they’re not counting. I lost weight consistently, at a rate of about 2lbs per week, and was eating 500 more calories a day than I supposedly needed (I know because I kept accurate track, even weighing my food). I should have gained weight, by her rational. How can I lose weight if I’m eating more than I should? And yet I did. And you know why I did that? Because I wanted to see if Taubes was full of it or not. Guess what, he’s not.

I find it utterly obnoxious that she reads review studies and acts like they’re infallible. A review study can find anything. They can take the data and interpret it in a myriad of ways, and how will you know whether it’s accurate or not unless you go back to the original study and run the numbers yourself?

And is it just me, or does her voice sound like it’s being run through voice altering software? Maybe it’s my old crappy headphones. For some reason though I wouldn’t doubt it. I just want to point out that she claims on her blog to weigh almost 200 lbs and says she wears a size 8 pants (like hell) at 5’3.5″. If what she says is true, at that height and weight, she is very obese. See, more bullshit. So, how’s that cheat diet working for her then? I know someone who is her height and wears a size 8, and they weigh 125 lbs (they have a normal BMI). You tell me where she keeps all that extra fat? Must be in her head.

BTW, that whole dollar sign thing is the most immature crap I’ve seen in a long while, and I’ve seen a lot of immature B.S. in my life.

I recently got around to listening to your interview with CS but did not listen to it very long. I don’t mind hearing opposing views on a subject, but why should I listen to someone who will not be up front as to who she is. Or maybe she is really a he? Or perhaps CS is a group effort? Whatever CS is, it is not worth my time. I am surprised its posts get such a response from the low-carb community.
