I’ve gotten to know Judy personally since 2007 through her blog, her lectures and attendance on the annual Low-Carb Cruise as well as through frequent e-mail and telephone exchanges over the years. Today I consider Judy a dear friend and a fellow crusader in this battle for the hearts and minds of people regarding what healthy low-carb living is real all about. And in the years that have transpired since she released CARB WARS there has been some really curious circumstances that have led to the creation of a second book of recipes. But this is no ordinary tale–it’s one of the most intriguing back stories behind a book that I’ve ever heard in my life with her sophomore release entitled Nourished: A Cookbook for Health, Weight Loss, and Metabolic Balance. I’ll share more specifics about this unbelievable story of how this book came about in just a moment. But first I want to brag on this incredible new cookbook that deserves to be in the kitchen of everyone who eats low-carb, Paleo or healthy in general!

One thing you can always be assured of with a Judy Barnes Baker book is professional brilliance in everything about it. From the cover photos featuring mouthwatering, succulent low-carb recipes as well as plenty of gorgeous photographed meal ideas sprinkled throughout the pages, it would be nearly impossible for you to say eating a healthy low-carb is “boring” as it is sometimes described by naysayers. In Nourished, you get lots of recipes but also specific menu-planning options to know which dishes are paired well together. For novice cooks who need that guidance, this is an invaluable resource and one that I’ve never seen before in any cookbook I’ve ever used.

At the beginning of Nourished, Judy presents an overview of why high-fat, low-carb diets are preferred for weight loss, controlling diabetes, and getting a handle on a whole host of common chronic health conditions like Alzheimer’s, heart disease and stroke. The one common denominator in obesity and metabolic syndrome seems to be the negative impact that comes from consuming carbohydrates which promotes fat storage and declining health. It doesn’t happen overnight so most people don’t understand the urgency in embracing the concepts of what I like to call livin’ la vida low-carb. But as an old Baptist preacher always used to say, “Payday someday.” And yet it doesn’t have to be that way which is why Judy provides a basic course in how low-carb diets work, what benefits you can expect to see, the safety of following such a plan, and why the continued “fat phobia” in our culture is not based on the science. For the uninitiated it’s an excellent introduction to the key concepts behind the low-carb lifestyle. And it’s a friendly reminder for those of us who have been eating this way for a while.

I appreciate that Judy doesn’t just have you jump into making these dishes without offering up her wise experience in working with ingredients you may not necessarily be used to using in a healthy cookbook. Saturated fat is rarely seen in recipes dedicated to being healthy and yet this is an ingredient that gives many of these recipes the flavor profile that will have you coming back to this cookbook time and time again. And for those who are concerned about the health ramifications from consuming real, whole foods like butter, coconut oil and tallow, for example, Judy makes a compelling argument for why you should be including them in your healthy diet. She also educates the reader about the various sweeteners, flours, thickeners and such that will make your low-carb cooking adventures as worry-free as possible.

So, what about all those incredible low-carb recipes? Of course, there are plenty of recipes for your regular daily meals included in the “Everyday Food” section in Part 1 with options for breakfast, lunch and dinner. Part 2 offers up suggestions for “Special Occasions and Entertaining” for those times when you have guests in your home and you want to wow them with your low-carb culinary excellence. From appetizer to the main course and even dessert, Judy’s got you covered. And if you’re worried about what to do during the various holidays that take place during the year, Part 3 is just for you featuring “Seasonal and Holiday Menus.” Everything from the perfect Valentine’s Day dinner, Easter dinner, Thanksgiving, Christmas, you name it is included in this book. Take the worries out of these stressful cooking events knowing you are making delicious, homemade food that is tasty and healthy for everyone who will be consuming it. Part 4 teaches you some of the “Basic Recipes” that you will use time and time again in your kitchen for various purposes like dressings, sauces and condiments. And finally, Part 5 includes lots of ideas for “Snacks, Food for Travel, and ‘Freebies’” that answer the age-old question, “What is something quick I can eat when I’m on-the-go all the time?” Judy answers that quite thoroughly with ideas galore for you to enjoy, embrace and implement into your hectic lifestyle that nevertheless deserves to be Nourished.

In the back of the book, Judy helps you identify and source the ingredients you will need to make these recipes she has created by connecting you with web sites and brick and mortar stores that carry these specialty products. It’s all conveniently wrapped up in a 350+ page book that you will reference time and time again in the years to come! And this book is so special that it includes not just one, but three incredible forewords from some of the biggest names in low-carb research and practice: Dr. Mary Vernon is the famous low-carb physician treating mostly obese and diabetic patients with carbohydrate-restriction in Lawrence, Kansas and is educating her fellow medical professionals about the benefits of low-carb diets through Innovative Metabolic Solutions; Jackie Eberstein is a registered nurse who worked with the late, great Dr. Robert C. Atkins in his complementary medicine practice in New York City for nearly three decades and still works with The Veronica Atkins Foundation to educate people about the benefits of the Atkins Lifestyle; and Dr. Richard Feinman is a biochemistry professor at SUNY Downstate in Brooklyn, New York and the Founder of The Nutrition & Metabolism Society dedicated to elevating the science in the discussion of diet and health. It says a lot about the value of Nourished to have three such distinguished and credentialed experts endorse the amazing work that Judy Barnes Baker has invested into this project.

With that said, here’s the unbelievable story behind this book that you may not know about unless you’ve heard my May 2011 podcast interview with Judy about it. After writing her first low-carb cookbook CARB WARS in 2007, she was attending the International Association of Culinary Professionals conference and had a “chance” encounter with a representative from the American Diabetes Association (that ended up turning into a full-fledged opportunity to write an official ADA-recommended menu-styled cookbook for them). Judy was shocked, of course, because the ADA has never been a fan of the high-fat, low-carb nutritional approach for people with diabetes (except for the purposes of weight loss up to one year beginning in 2008). Skeptical, she agreed to write the book and submitted a thorough 32-page book proposal with 15 sample recipes that she never expected them to accept. A few months later she received news that the ADA board had approved her proposal and she began working on her book in the Fall 2008. For more than a year, Judy was faithfully submitting her recipes and nutritional information to them with very little feedback about how she was doing. In fact, the book actually became available for pre-order on the McGraw-Hill web site and she thought the book was actually going to happen.

Realizing what a golden opportunity this was to promote the low-carb message to diabetics who desperately needed to eat this way, Judy was especially careful not to be too “in your face” with her high-fat, low-carb recipes and took painstaking mindfulness and tact in creating recipes that she thought they would approve of. After months of “dead silence” after turning in the draft of her book, she realized something was wrong when they started promoting the book with a front cover that included an “austere looking plate” of bland, low-fat food that didn’t resemble any of the actual recipes she created for the book. Shortly thereafter, she received a conference call from the editors encouraging her to make “changes” that they deemed important, namely for her to lower the fat content of the recipes by choosing lean meats, whole grains, low-fat and fat-free dairy, reducing the salt content of the recipes and switching from using butter to margarine. She politely explained to them that a healthy low-carb diet for diabetics is one that is high in fat, not low-fat. They gave her an ultimatum–make the changes or it would not be published. To her credit, Judy refused to back down from her principled stance that a healthy low-carb diet is one that includes fat…so she walked away from the lucrative deal despite being told by the ADA representative she was working with that she had written “a good book.”

Though disappointed, Judy was not about to let all of her hard work go to waste and began pursuing alternative means for getting her book published under the original title The Healthy Edge: A Cookbook Based on the Latest Science of Nutrition and Metabolism. She started re-writing parts of the book where she had been careful about appeasing the ADA and made them like she wanted them to be. I’m sure that “Fat Phobia” section in the beginning of Nourished was a direct response to this rejection by the ADA of her book. But she knew she had to speak the truth about what low-carb living is all about. That’s why she teamed up with the Nutrition & Metabolism Society and Innovative Metabolic Solutions to get this book published at long last in 2012. Thanks to lots of guest contributions from her friends in the low-carb community who provided their own recipes for this book, the book is a perfect collection for anyone seeking to live optimally healthy.

Judy has a personal dream to sell 50,000 copies of this book to show the ADA how foolish they were to screw around with someone who was simply trying to do her part to truly help people with diabetes, obesity and metabolic syndrome by providing recipes and information that could quite possibly change their lives forever. I think this is a noble cause worth rallying behind by doing our part to help Judy reach this goal she has set. It’s time to send the ADA a message–high-fat, moderate protein, low-carb living is saving lives, normalizing blood sugars, lowering A1c levels, reducing and eliminating the dependence on insulin and diabetes medications, and giving hope to people who feel hopeless about a disease that has reached epidemic levels. You can go the route of famous people like Paula Deen who choose to keep eating carbohydrates while taking questionable prescription diabetes drugs or you can eat deliciously healthy recipes made with real butter and other fats while eschewing the blood sugar and insulin-raising effects of carbohydrates. The choice is yours!

I wanted to let you know about this as soon as I did–the long-awaited brand new cookbook from my friend and low-carb cookbook author Judy Barnes Baker is NOW AVAILABLE for purchase here. You might recall from my May 2011 podcast interview with Judy that this was the book that she was originally commissioned by the American Diabetes Association to write as an official ADA-recommended cookbook for people with diabetes that was going to be called The Healthy Edge.

After drafting a thorough 32-page book proposal and having it accepted following a chance elevator pitch to an ADA representative interested in using her recipe-making talents like she did in her first book Carb Wars: Sugar Is The New Fat, she excitedly started working on the recipes that would hold true to her firm belief in the high-fat, moderate protein, low-carb principles that helped her and her husband be as optimally healthy as possible. Although she did everything she could to appease their requests with the recipes, Judy would not compromise on what she knew would be nutritious foods for diabetics to consume and refused to cut out the fat from the dishes she was creating.

After months of “dead silence” after submitting most of the manuscript for her book, she heard from the editor who offered up the ADA’s suggestions for making the recipes better by instructing her to cut the fat content in them. She outright refused to use margarine in the recipes as they requested and that ended up being the deal breaker that forced her to make the difficult decision to walk away from the contract. With all the evidence pointing to healthy high-fat, low-carb living for diabetics, the ADA still doesn’t “get it” which is why it’s good to have people like Judy Barnes Baker who DO. The fat-phobia within the ADA will not being going away anytime soon, but that’s okay–the REAL message is getting out thanks to the efforts of Judy in her brand new book with the final version of the title being Nourished: A Cookbook For Health, Weight Loss and Metabolic Balance.

As she shared in my interview with her earlier this year, Judy collaborated with the Nutrition & Metabolism Society (NMS) on this book with contributions from three true giants in the world of low-carb living: the preface by the great low-carb practitioner Dr. Mary C. Vernon, the foreword by the incomparable RN who worked with Dr. Atkins himself for three decades Jackie Eberstein, and a scientific perspective from biochemistry professor and NMS founder Dr. Richard Feinman. And Judy’s dream is to see this book sell in excess of 50,000 copies as a way of sticking it to the ADA for refusing to publish her high-fat, low-carb cookbook. With all the enthusiasm for livin’ la vida low-carb in recent years, I cannot imagine that she wouldn’t meet and exceed that goal. With YOUR help, it can certainly happen.

I haven’t personally received a copy of Nourished yet, but will DEFINITELY write a review on it when I do. It’s not yet listed on Amazon yet, but you can get it exclusively right now from our friends at LC Foods. THANK YOU for supporting my friend and true low-carb champion Judy Barnes Baker in her battle against the dietary dogma that exists within the ADA. Let’s rally behind Judy and help her blow that goal of 50,000 book sales out of the water! If this new book is anything like Carb Wars was, then you’re gonna be in for a real treat.

Here are a couple of the amazing recipes you’ll find in Nourished:

We need your help with an exciting new research project targeting people with diabetes (Type 1 and Type 2). Whether you, a friend or family member is dealing with this disease, it is imperative we have participation from as many people as possible for a critical evaluation and analysis of dietary trends regarding diabetes management. Full details on how YOU can get involved are below.

Just when you think the low-carb message has possibly hit a stalemate outside the friendly confines of the enthusiastic and cohesive members of the low-carb community on the Internet, along comes some encouraging news on the research front for those of us who are committed to this way of eating that has so radically changed our lives forever for the better. I’ve previously blogged about the trend that has been happening in the research realm using low-carb diets for treating obesity. But in recent years a shift in thinking has taken place moving the focus away from simple weight loss (which is merely a side effect of a sound nutritional plan like low-carb anyway) to more of a means for managing disease. This is an exciting new development that could catapult the cultural thinking about low-carb diets from a “quick weight loss fad” into a bona fide and effective means for treating real diseases that plagued tens of millions of people.

My friend and biochemistry professor extraordinaire Dr. Richard Feinman from The Nutrition & Metabolism Society has been working diligently behind-the-scenes in the research world to get more exposure and funding for the emerging evidence supporting the concept of carbohydrate-restriction as a therapeutic measure for dealing with various chronic diseases–most notably diabetes. In fact, he was able to get in touch with the Office of Research Integrity (ORI) earlier this year about making a series of presentations at their annual conference on the “Crisis In Nutrition” that exists in the United States today. This government agency is connected to Health & Human Services (HHS) overseeing all research being conducted and funded by agencies such as the National Institutes of Health (NIH), The Centers for Disease Control and Prevention (CDC), and The Food and Drug Administration (FDA), for example. Billions of dollars have been allocated annually to insure the veracity of the research being funded by the government.

The “Quest for Research Excellence 2011 Conference” from the ORI was scheduled to take place August 29-30, 2011 in Washington, DC, but it was postponed due to Hurricane Irene. They have since rescheduled the event for March 15-16, 2012 and Dr. Feinman has been asked to oversee the “Crisis In Nutrition” portion of the conference featuring multiple presentations on the utter failure of current nutritional research and policy. One of the lectures to be presented on is “Vox Populi” seeking out the “voice of the people”–THAT’S YOU AND ME! Working with me, Tom Naughton from FAT HEAD and Laura Dolson from About.com Low-Carb Diets, Dr. Feinman has been seeking insights into how a growing share of the population views the current state of nutrition science and the official dietary recommendations. The three of us bloggers have been scouring our respective sites for real-life examples of how people have sought out alternative nutritional information in light of the failure of the official recommendations from government agencies like the USDA. It wasn’t very difficult to find such examples from three of the biggest low-carb bloggers and we’re excited to be a part of this “Crisis In Nutrition” series.

The fact is all of the supposed benefits of the low-fat, grain-based diets promoted by the U.S. government are not based on solid science. As a result, many people no longer trust the government when it comes to the subject of nutrition. The tremendous benefits of low-carbohydrate diets have seemingly been deliberately squelched and it’s evident in comments like this one:

“The medical and pharmaceutical companies have no interest in us becoming healthy through nutrition. It is in their financial interest to keep us where we are so they can sell us medications.”

This distrust in the government’s dietary recommendations is not limited to patients–many doctors and those in nutritional academia are also highly concerned about the negative impact of nonsensical and poorly-designed studies on diet that lead to some rather dubious conclusions that are not even close to being grounded in any real scientific evidence. Here’s what one of them had to say about this issue in the comments section:

“Sometimes I wonder if people making these statements even took a basic course in biochemistry and physiology.”

As such, a lot of patients have chosen to give up on their doctors, dietitians and other health care professionals and instead turn to the Internet for help with their weight and health issues. Frustrated diabetics especially have grown weary of the low-fat, high-carb diet that is not helping them control their blood sugar levels. As one woman wrote about her experience with a diabetes center:

“I was so frustrated, I quit going to the center for check-ups.”

This is a serious problem that requires immediate attention from governmental research oversight committees like the Office of Research Integrity. They need to know that the patient community is not being well-served by an establishment that refuses to address its critics from within the general population as well as health professionals. That’s what we will be sharing at the March 15-16, 2012 meeting where Tom, Laura and/or me will be presenting the “Vox Populi” data at the ORI conference. But since we have a little more time before that happens, Dr. Feinman has come up with a way to collect even more invaluable information to be presented at that meeting.

Introducing The Patient’s Voice Project (PVP).

This is an online effort to solicit people with diabetes (Type 1 and Type 2) to share their experiences following a variety of diets designed to control or improve this disease. If you’ve tried the traditional diabetic diet (low-fat, high-carb) and then switched to a nutritional plan like the one promoted by Dr. Richard Bernstein for diabetics (high-fat, low-carb), then the researchers want to hear from YOU! Real-life examples from people with diabetes who have been able to successfully manage their disease with minimal medications simply by making changes in their diet are requested. You can be as verbose as you’d like to be in sharing your story in your own words. This will probably take about 15 minutes maximum to write, but feel free to be as thorough as you can be to provide the best results for PVP.

If you would be willing to share your experiences with diet as a therapy for managing your diabetes, then please e-mail your story to The Patient’s Voice Project Scientific Coordinator Michael Turchiano (mturchiano.pvp@gmail.com) and copy me on the e-mail as well (livinlowcarbman@charter.net). Be sure to include all the specific details of your situation, including when you were diagnosed with diabetes, what diets you have tried to deal with the disease, how long you were on each of the diets, whether you consulted with a doctor or other health care provider, what diet they recommended to treat your diabetes, how they responded to your nutritional choices, and any medical records relating to your diabetes diagnosis and treatment results you’d like to share. You control how much information you are willing to provide and the researchers will compile all the data from the submissions they receive. They especially want to hear from diabetics who have changed their diet from one to another and experienced a different outcome. They also want to know who or what influenced you to change nutritional plans for treating your diabetes. All of the information you provide will be kept confidential and will only be used for the purposes of this research.

The information you provide will be a critical part of future published research in scientific journals as well as at the Office of Research Integrity conference early next year. WE NEED TO HEAR FROM YOU! Help us make this effort successful by posting this information to Twitter, Facebook, blogs, podcasts…anywhere you can get the word out to diabetics–again, testimonies from both Type 1 and Type 2 are desired. Here’s a golden opportunity to send a message to those government agencies who have fooled the American public into thinking a “healthy” diet should be devoid of fat, heavily focused on grain and vegetable oil consumption, and eschewing animal-based foods–we know better, don’t we? Don’t delay. Send in YOUR story today. DON’T FORGET: E-mail Michael Turchiano (mturchiano.pvp@gmail.com) and copy me in (livinlowcarbman@charter.net) on your response. Let’s change the world and make a real difference for the sake of diabetics and non-diabetics alike.

There are a lot of people who work tirelessly behind-the-scenes to promote the science supporting a high-fat, moderate protein, carbohydrate-restricted nutritional approach to improve health that has been virtually ignored by much of the mainstream health media (although I do sense this is changing a bit in the past year). While people like Dr. Oz seem to attract most of the attention of the modern American culture regarding health, there are other voices of reason and truth that deserve a chance to be heard loud and clear on the subject of diet and nutrition. One such person who fits the bill is Dr. Richard Feinman, Professor of Biochemistry at Downstate Medical Center (SUNY) in New York. He is also the Founder of The Nutrition & Metabolism Society (NMS) dedicated to pushing “the therapeutic potential of low-carbohydrate diets for the treatment of obesity, diabetes and cardiovascular disease” because they believe it “is under-investigated and under-utilized.”

Dr. Feinman is a great friend of what we do here at “Livin’ La Vida Low-Carb” because he is passionate for sharing nutritional truths instead of the same old dietary dogmas that pervade American thinking regarding the role of diet in health–especially for people with Type 2 diabetes. You can catch a glimpse of what I’m talking about in this May 8, 2010 lecture from Dr. Feinman sharing about the current state of low-carb diets that is quite revealing. And don’t miss Part 1 and Part 2 of my May 2008 podcast interview with one of the great thinkers in the low-carb research community. Dr. Feinman has a unique knack for bringing about action without the need for unnecessary and ineffective antics. For example, when Diabetes Health recently published a controversial and inflammatory anti-low-carb column by an American Diabetes Association apologist named Hope Warshaw (to which the low-carb community rightfully responded quite vehemently in opposition to), he simply wrote a letter to the editor requesting a panel discussion debating the merits of low-carb diets for diabetes–and she “loved the idea” and is pursuing it to become a reality in the coming months. That’s the power of one person willing to stand up and be counted and Dr. Richard Feinman deserves to be lauded for the role he is playing to keep the conversation progressing.

To that end, I wanted to publicly thank Dr. Feinman for all of the great work he is doing. Since today is his birthday, I thought it would be a nice gesture if the members of the low-carb community would show their appreciation to him by making a contribution and becoming a member of NMS for as little as $10. They are a 501(c)3 nonprofit health organization and rely on the generosity of their members to keep their work of “providing research, information and education in the application of fundamental science to nutrition” going for many more years to come. I cannot think of a better way to celebrate the countless hours of work that Dr. Feinman has invested into making low-carb science accessible to both the medical professional and the layperson alike. He is one of the good guys in this ongoing conversation about the current state of health in the world today and I sincerely hope you can stand with him as a member of The Nutrition & Metabolism Society.

By the way, have you visited the new and improved web site for NMS yet? THANKS to many long late-night hours of design work and writing put in by Ellen Davis at “Healthy Eating Politics” over the past month, the NMS web site now looks amazing to all who visit looking for information about low-carb science, diabetes, obesity, dietary fat, cholesterol and so much more! It’s so user-friendly now that people will WANT to visit again and again to keep educating themselves about this incredible way of eating. Special thanks also goes to Jeff Marek for creating the original web site for NMS and maintaining it for the past three years on a volunteer basis. Please remember Jeff in your thoughts and prayers right now as he recovers from a recent illness. Others to thank include Amy Dungan from the “Healthy Low Carb Living” blog for her fundraising efforts and other contributing work, John Slough who had the unenviable task of updating the research sections of the web site which will include a comprehensive research library with the plethora of studies on low-carb diets for weight loss and diabetes (ETA for completion of this project is late 2011), and all the bloggers who have promoted the work of The Nutrition & Metabolism Society.

Working together as a community united by a common theme of helping people find and discover the truth about livin’ la vida low-carb is what makes us stronger than ever before. As the science continues to validate the principles of high-fat, moderate protein, low-carb living in the coming years, it is incumbent upon us all to stand firm against the low-fat lunacy that dominates our society and to help give people the very best information so they can make an informed decision about what to do about their weight and health. That’s the mission of The Nutrition & Metabolism Society and it should be the mission of anyone whose life has been changed forever because of the healthy low-carb lifestyle. Won’t you sign up for a Consumer Membership for $10 today? Thank you so much for your support of this great organization that has done so much for the low-carb cause.

This organization whose self-proclaimed mission is to be “focused on the treatment and management of overweight and obese patients and their related conditions and co-morbidities” has opened the door wide open for the scientific evidence supporting carbohydrate-restriction as a legitimate medical therapy to be heard by doctors, nurses and others in the field of medicine thanks to their association with The Nutrition & Metabolism Society (listen to my June 2010 podcast interview with the tireless workhorse behind NMS Laurie Cagnassola). I don’t know if you realize just how huge this ASBP/NMS marriage has been in directly educating real bariatric doctors whose specialty is helping their patients who struggle with weight loss. The most exciting thing I’ve noticed is that they’ve been exposed not just to the amazing anti-obesigenic effects of this way of eating, but also the amazing health benefits of livin’ la vida low-carb as well–THIS IS ALL A REALLY BIG DEAL! And my wife Christine and I have been privileged to attend all of these conferences over the past five years (Seattle, WA in 2010, Charleston, SC in 2009, Phoenix, AZ in 2008, Nashville, TN in 2007, and Brooklyn, NY in 2006).

Well, it’s back again for 2011 and this year it’s set to take place at the Hyatt Regency in Baltimore, Maryland on April 9-10. The entire ASBP/NMS conference actually runs April 6-10, but the lectures about low-carb science will happen over the weekend featuring a lot of familiar names and few you may not have heard of before promoting the very latest research on the subject of low-carb diets. NMS recognizes that there are indeed a variety of dietary plans that exist out there to treat obesity and weight-related diseases. But they feel it is very important that bariatric physicians and other medical professionals treating the obese clearly understand the science that is being promoted as evidence for any particular nutritional approach–especially low-carb which has far too often been ignored as a fad when the scientific evidence shows otherwise. The purpose of this annual symposium is to focus primarily on the metabolic aspects of ketone bodies and the role ketogenic diets play in fat loss and as a dietary therapy for a wide range of diseases. They specifically targeting bariatric physicians, nurse practitioners, and physician assistants who want to learn about the latest scientific advancements into the clinical use of carbohydrate-restriction with their patients, but literally anyone interested in the subject is invited to attend. 7.5 AMA PRA Category 1 Credits are provided to any medical professional for attending this course.

I bet you wanna know who’s speaking this year, right? It’s quite a prestigious lineup!

Richard D. He is one of the most passionate defenders of genuine science that you’ll ever meet as evidenced by this talk he gave in New York City in early 2010.
In addition to Dr. Seyfried’s amazing work on ketogenic diets and cancer, we have some truly remarkable work coming out of Eugene J. Fine, MD, MS at the Einstein College of Medicine. His RECHARGE Trial (REduced CarboHydrates Against Resistant Growth Tumors) is examining people with cancer who have been told by mainstream medicine there’s nothing more that can be done for them and putting them on a very low-carbohydrate diet in an attempt to reduce the amount of cancer cells in their bodies. I shared this video talk with Dr. Fine on my blog in July 2010 and I am looking forward to hearing more from him about his work at the NMS symposium! He’s agreed to come on my podcast for an interview sometime this year as well.

LECTURE: “Ketone Bodies and Cancer”
DATE/TIME: Saturday, April 9, 2011 from 3:45-4:30pm
This lecture will review plausible molecular mechanisms through which ketone bodies can spare functionality in normal cells but suppress growth in cancer cells.
Stephen D. Phinney, MD, PhD is a Professor of Medicine Emeritus at The University of California-Davis as well as on the editorial board of the American Journal of Clinical Nutrition. He’s certainly no stranger to the world of low-carb. He has been continuously researching carbohydrate-restriction for a quarter century–more than anyone else I’m aware of–and is convinced of the science behind this way of eating for a whole host of positive health benefits. In 2010, Dr. Phinney co-authored The New Atkins For A New You and is championing the cause for physicians to begin using carbohydrate-restriction as a therapy with their patients. He too will be making an appearance on my podcast later in 2011 to discuss an exciting new project he is working on this year to make that happen.

LECTURE: “Human Keto-adaptation: Physiology and Function”
DATE/TIME: Saturday, April 9, 2011 from 4:30-5:15pm
This presentation will focus on how humans can adapt to conditions of carbohydrate restriction, specifically how fuel sources shift from glucose and fatty acids to fatty acids and ketones, and how this shift leads to appetite reduction, weight loss, and improvement in surrogate markers of cardiovascular disease.
—————————————————————-
Over the past decade, Jeff S. Volek, PhD, RD (listen to my March 2009 podcast interview) has worked tirelessly in his lab at The University of Connecticut leading and conducting some of the most extraordinary studies on high-fat, low-carb diets. From recognizing that all the markers of metabolic syndrome are the same ones improved on a low-carb diet to his discovery that less dietary fat consumed leads to higher levels of blood fats, his work is truly on the cutting-edge of nutritional science and should be followed closely by anyone interested in learning how and why low-carb diets work. He too was a co-author of the book The New Atkins For A New You last year and is a man whose career is far from being finished. I always enjoy Dr. Volek’s lectures at these meetings.

LECTURE: “Anti-ketogenic Effect of Insulin and Dietary Carbohydrate”
DATE/TIME: Sunday, April 10, 2011 from 8:00-9:00am
This presentation will review the role of glucose and insulin on the regulation of fatty acid metabolism and development of dyslipidemia in the pathogenesis of metabolic syndrome and cardiovascular diseases.
Vernon, MD, FAAFP, FASBP, CMD and you can’t help but have a big smile on your face. Dr. Vernon exudes with enthusiasm about this subject because she has seen firsthand the changes that have happened in her patients over the past decade-plus! She is one of the featured speakers on the upcoming Low-Carb Cruise in May 2011 and I always look forward to hearing her speak–it’s NEVER boring!

LECTURE: “Clinical Treatments Using Nutritional Ketosis”
DATE/TIME: Sunday, April 10, 2011 from 9:00-10:00am
This presentation will cover the clinical implementation strategies of a low-carbohydrate diet and its usefulness in treating metabolic disorders.
One of the hottest areas of research on the therapeutic effects of low-carb diets is with seizure control for people with epilepsy. Eric H. Kossoff, MD from Johns Hopkins has been using what he describes as a “modified Atkins diet” to effectively treat and greatly reduce the number of seizures being experienced by epileptics. I highlighted his work in my June 2010 podcast interview with him (also listen to my August 2009 interview with Dr. Deborah Snyder whose son Bryce beat his epilepsy with a low-carb, ketogenic diet) and I can’t wait to hear the very latest developments in his research.

LECTURE: “The Ketogenic Diet for Epilepsy”
DATE/TIME: Sunday, April 10, 2011 from 10:15-11:15am
Dietary therapies can be beneficial for symptomatic generalized epilepsies. This presentation will explore the effects of the ketogenic diet for management of epilepsy.
Isn’t that a fantastic roster of low-carb experts? I look forward to hearing from all of these speakers and doing what I did in 2010 conducting live tweets from my Twitter page. So many people enjoyed that so much that I’m willing to do it again…although it is exhausting tweeting from my iPhone for hours on end. See what sacrifices I make for you? HA HA HA! If you’re personally interested in being there, we’d love to meet you in person.

There are a lot of people who have stepped up to the plate on behalf of the science behind carbohydrate-restriction because they realize this message is much too important for the sake of the literally hundreds of millions of people around the world who are currently suffering from obesity, diabetes, metabolic syndrome, heart disease, cancer, and other preventable diseases! Many of these highly-intelligent and well-respected MDs, PhDs, and other medical and nutrition professionals have literally put their careers on the line defending this way of eating because they themselves have seen it radically change the lives of real people every single day through their patients, research subjects, and even themselves. This passionate interest in the subject of livin’ la vida low-carb really isn’t about some propagandist zealotry based on empty conjecture and innuendo as can oftentimes creep into any discussion of diet and it’s unmistakable relationship to health. It really is all about the “weight of the evidence” regarding the science supporting high-fat, low-carb nutrition as my friend Regina Wilshire so aptly proclaims in the title of her blog. On the front lines of this debate of ideas is an unassuming introspective biochemistry professor from SUNY Downstate in Brooklyn, New York named Dr. Richard Feinman.

Dr. Feinman is the Founder of the non-profit Nutrition & Metabolism Society (NMS) dedicated to promoting solid nutritional truths supported by the research (listen to my June 2010 podcast interview with the director of NMS, Laurie Cagnassola) and he also regularly teaches medical school students about the all-too-obvious biochemical relationship between diet composition and healthy living. He is the co-Editor-In-Chief of the Open Access online journal Nutrition & Metabolism featuring cutting-edge research on subjects related to nutritional biochemistry. He gathers together the top low-carb diet researchers in the world annually as part of the American Society of Bariatric Physicians conference to teach weight loss doctors about the benefits of using carbohydrate-restriction on patients instead of surgery. Dr. Feinman is a true rebel with a noble cause that he is bound and determined to fight on behalf of for the rest of his career because he sees the value this way of eating has for people dealing with the diseases of modern man, especially diabetes, obesity, and metabolic syndrome.

On May 8, 2010, there was a fantastic Strategy & Planning Meeting for NMS in New York City that featured guest speakers sharing with some key players in the low-carb community about how to most effectively communicate the low-carb message more clearly to the public. From low-carb nutritionists educating patients on how to tweak their diet for optimal health to a NASA rocket scientist who is helping NMS revamp their web site to be more competitive with the American Diabetes Association, this was quite an informative and productive meeting. The highlight speaker for the event was none other than Dr. Richard K. Bernstein himself who has lived with Type 1 diabetes for over six decades strong and is considered the true pioneer for the low-carb dietary treatment option for diabetics. But while Dr. Bernstein’s personal testimony speech was spectacular, the “Default Diet” speech by Dr. Feinman is one not to be missed and you can listen to the full one-hour lecture for yourself (and he’ll also be presenting testimony before the USDA Advisory Committee for the 2010 Dietary Guidelines on July 8, 2010 in Washington, DC). Let him encourage you in your own personal low-carb journey as you share with others why you are livin’ la vida low-carb!
