My weight stayed stable and my cholesterol was below 200. When I started to eat "normally" my cholesterol went to 230+ and the LDL over 130. Over the past 16 years I have slowly gained 55 pounds!!

Eating a "normal diet" I was always hungry - reason for the weight gain I am sure.

No more!! I am 57 and going back to Low Carb Living. And back to the eggs and foods I love so much!

I lived a low carb life from 1973 to 1992 with no ill effects. To get the full benefit of eggs (yes, including the yummy yolk!) remember it doesn't take that much longer to cook them in a skillet. After reading all about the negative effects of microwaves, I completely got rid of mine. I don't miss it at all, and everything tastes much better! Plus, I know I am getting all of the nutrition that foods offer.

Please consider that studies show microwaving food depletes the vast majority of their nutritional value. It's not only the yummiest part of the egg but also the most healthy. Don't worry about the cholesterol-nonsense. Also, the yolk contains the best nutrients, and loads of vitamins and other essential nutrients (see Jimmy's post and the update).

Saturated fat, btw, is absolutely necessary in any healthy diet. There are mountains of scientific evidence for this. Don't believe the fat-phobists: they do not have a shred of evidence. Not a shred!

Hi April,

Make sure you ALSO consume the eggyolk! It’s not only the yummiest part of the egg but also the most healthy. Here's mine:

1 cup (125 calories) eggwhites
1 teaspoon flax oil (40 cals)
2 tablespoons salsa (10 cals)

total: 175

After years of eating bagels for breakfast and being a hungry basket case all the time, I worship the eggwhite!

I'm not comfortable with eating all the saturated fat in eggs all the time, but I worship the humble eggwhite. I get them at BJ's in packs of 6 cartons each. Comes out to $1.50 per carton, and each carton has two day's worth of breakfasts! Very low carb, very low budget! What could be better?

Have you blogged re: the effects of low carb on decreasing anxiety? It's one of my favorite topics. I dropped my carbs bigtime when I started CR, after years as a lowfat vegan! And my anxiety disappeared! Have you experienced this or heard from others who have?

Spending a lovely evening catching up on your blog! Must go do some real work soon though!

April CR

Low carb breakfast makes you feel calmer and happier all day! Instead of adding milk or water when you scramble them, try sugar free syrup. :)

I found another great way to make eggs.
