In Episode 20 of “Low-Carb Conversations With Jimmy Moore & Friends,” we’ve got another terrific chit-chat session with two more “friends” today joining me and my wonderful co-host Mindy Noxon Iannotti. First we have a California girl named Misty Humphrey from the “Healthy Transitions” blog who will bring her expertise on all things nutrition (serving as the “Healthy Eating Specialist” for her local Whole Foods store) to the conversation. Also with us is Paleo fitness guru Rachel Flowers from “Alternefit” who also brings loads of expertise and personal passion to the subject of health. These two ladies have some really scrumptious low-carb recipes to share with you today, but first they debate the merits of having a “Paleo template” as Chris Kresser from “The Healthy Skeptic” describes it or if there is one set “Paleo Diet” that cannot be tweaked or changed in any way. This is a hot topic of discussion in the Paleo/low-carb blogosphere right now and we’re talking about it today on “Low-Carb Conversations.”

Listen to Misty Humphrey and Rachel Flowers give you their take on low-carb:

  • Jimmy’s trip to the Ancestral Health Symposium next Friday
  • Taking a month off from the podcast in the month of August
  • Misty’s journey as a “professional dieter” (which she was never good at)
  • Her hypoglycemia and three children that ballooned her up over 200 pounds
  • The changes she made in her diet in February 2000 starting the Atkins diet
  • How her passion with her success led her to study holistic nutrition
  • The confrontation she had with her conventional wisdom nutrition teachers
  • Rachel’s pathway to Paleo/primal low-carb living that began in 2010
  • How her then-fiancé’s diabetes led her to seek out a nutritional answer
  • Her exposure to Sean Croxton’s “Underground Wellness” that helped her
  • Chris Kresser’s “Paleo Diet” vs. “Paleo Template” column
  • Misty’s thoughts on the basic parameters of a healthy diet
  • Rachel’s appreciation of finding something workable for people to eat
  • Mindy’s evolution of her diet to fit her personal preferences
  • The validity of the idea to “experiment and observe”
  • Misty’s Cilantro-Lime Mahi & Guacamole
  • Rachel’s Low-Carb, Gluten-Free, Almond Flour Muffins
  • Listener Sarah Balfour’s question about statin drugs being harmful
  • The excellent web sites that are interpreting the science in “layman’s terms”
  • The side effects that happen when you take Lipitor or Crestor
  • The lack of understanding LDL, HDL, triglycerides and particle size
  • Finding a Low-Carb Doctor in your area
