In Episode 31 of “Low-Carb Conversations With Jimmy Moore & Friends,” we’ve got two fabulous friends to share a nice little session of chit-chatting about healthy low-carb living with me and Mindy. First we welcome a “Paleo grandmother” as she describes herself at her newly-minted blog “Don’t Wake The Monster!” named Lynn Weiler. She dealt with a lifetime of health issues, primarily asthma and breathing issues, that she was able to beat thanks to healthy Paleo/low-carb living. WOO HOO! We also have a fascinating fermentation expert named Bryan Davis from AskBryan.com who looks at food and nutrition-related topics through a slightly different prism than most people. We had a great time focusing in on why diets tend to fail because the advice we’ve been given is wrong (DUH!), what’s lurking in the midst of that uniform-tasting orange juice so many people are supposedly drinking for their health, and some scrumptious low-carb recipes like pizza peppers that will have your mouth watering! It’s all the usual fare that you’ve come to know and love from this podcast. ENJOY!

Listen to Bryan Davis & Lynn Weiler share their experience:

  • The fun we’re going to have on the 2012 Low-Carb Cruise
  • “Even in a down economy, pork rinds crackle”
  • How versatile pork rinds are in the low-carb diet
  • Lynn’s “long journey” of dealing with “wheezing” from asthma
  • Her doctor put her on a low-fat diet and she gained weight
  • The breathing issues became much worse eating low-fat
  • How she got introduced to low-carb that got her off of meds
  • The impact of the Genocide book by Dr. James Carlson
  • The continuing education she engages in through books/blogs
  • Bryan is a “Paleo/LCHF lifestyle enthusiast/tinkerer”
  • How he thought his gut damage was “permanent”
  • How he “stumbled upon” fermenting foods through Food, Inc.
  • The impact of Robb Wolf‘s The Paleo Solution on him
  • Why he has concerns about “taking a probiotic” on Paleo
  • “Diets fail because advice is wrong, say researchers”
  • Mindy says “if it were only that simple” to eat less, exercise more
  • Lynn was gaining weight working out six days a week
  • Bryan’s lack of enthusiasm about “willpower” and JERF
  • Why he consumes “Bulletproof Coffee” with butter in it
  • Lynn’s favorite saying “don’t wake the monster” (now a blog!)
  • “The Secret Ingredient In Your Orange Juice”
  • Mindy’s comparison of OJ to the mystery meat chicken nuggets
  • How Lynn is allergic to food dyes and sulfites
  • How Bryan got so angry with “corporate food” because of this
  • Mindy’s comment that you “can’t trust anything” anymore
  • Lynn’s “Pizza Peppers” recipe
  • How her husband was “in heaven” eating this dish
  • Why Bryan continually brews eight gallons of kombucha
  • How fermented foods are a fabulous alternative to OJ
  • Why the sugar profile is changed in the fermenting process
  • What you can do to brew up your own kombucha (make tea!)
  • “Bryan’s Pro-Biotic Ginger Bug” recipe
