I am very impressed it isn't filled with soy and other additives like so many other low-carb breads. I might have to give this a try! The sprouted beans are a bonus, but it would be neat if the other flours were sprouted, too (to neutralize the anti-nutrients and such). But it looks like an awesome alternative to most breads.
