So I contacted Colette Heimowitz at Atkins Nutritionals and she was delighted to have me share this with my readers at “Livin’ La Vida Low-Carb.”

I apologize for the audio quality of this presentation. This was a teleconference call and the quality is fairly typical of what you get from those. But I think you’ll be able to hear enough from Dr. Phinney and Dr. Volek to understand what they’re saying. I will work on conducting my own interviews with both of these giants in the low-carb research world in the coming months so we can follow-up on the information they presented here.     I have learned a huge amount from your blog.

    It seems to me today (tomorrow might well be different)
    that the term “whole grains” is bad because some whole grains increase your chance of heart problems (like wheat) and others (like rice or corn or oats) don’t seem to do that. It’s like vegetables ( spinach is good, potatoes are bad) or fruit (berries are good, bananas are bad. But it’s not so simple as the glycemic index.

    It seems like the Japanese who eat rice all the time have a fifth the heart disease we do, so it’s hard to blame carbohydrates for heart disease. I’m starting to think it’s wheat, but I wonder what other people think.

    You can see I’m more interested in long term health than in weight loss, but I haven’t made up my mind about anything.
